American pharmacist Wilbur L. Scoville invented the Scoville Scale, which measures the spiciness of foods. Jalapeno pepper, for example, has a Scoville Heat Unit (SHU) of 4,500 because it must be diluted 4,500 times before it loses its spiciness. Dorset Naga, made by Michael and Joy Michaud of England, has 923,000 SHU. Nordihydrocapsid has 9,100,000 SHU.
