European cuisine changed dramatically, limiting the use of spices, separating flavors, and popularizing coffee, tea, and chocolate—three beverages that would eventually replace spices due to international trade. Coffee came from Yemen and Ethiopia, tea from Sichuan, China, and chocolate from the Amazon basin and Mexico. Tea on the London market cost about £10 a pound (about €1,500 today for less than 0.5 kg), while a pound of coffee on the Paris market cost €2,000 today.
